Massimo Di Luca, an industry powerhouse, was instrumental in planning for the opening of the Crown Casino and Resort in Melbourne, eventually leading a team of more than 300 chefs and stewards. He developed amazing live-cooking presentations that still operate to this day.

Tenures at the Dorchester London and serving as President of La Toque Blanche further cement his industry standing. Massimo was also the Corporate Executive Chef for Costa Cruise Lines in Genoa and Miami, overseeing the food operations for a fleet of ten ships.
